Mojo Chicken Wing

A simple quick and healthy recipe.

Ingredients

lb chicken wings 

1 small head of garlic 

1/4 cup olive oil

1 juice of orange (preferably sour orange)

1 juice of lemon 

1 juice of lime 

1tsp cumin 

1tsp oregano 

1tsp salt 

1tsp pepper 

Directions:

In a blender add garlic, oregano, cumin, salt, pepper, orange juice, lemon juice, lime juice and olive oil. Blend until well combined. 

In a large bowl pat the wings dry with paper towels. Add mojo and toss until they are evenly coated. Place in the fridge for at least 30 minutes up to overnight 

Preheat oven to 425 degrees F. Place a wire rack inside a large baking sheet lined with aluminum foil. Lay the chicken wings on the wire rack.

Bake for 35-45 minutes. Half way through baking, give the wings a turn so they can evenly crisp.  

Note: Not all ovens are created equal so keep an eye on them at the 35-minute mark. If they are not yet crispy, broil for the next 5- 10 minutes 

Once the wings are fully cooked, remove them from the oven. Sprinkle some lime and salt and serve.
